While it’s usually topped with a hearty helping of marshmallows, or loaded with a few cupfuls of brown sugar, this healthy sweet potato casserole recipe includes no refined sugars, dairy, or gluten. But make no mistake: it’s still deliciously rich and indulgent.

The best part about this healthier take on savory sweet potato casserole is that it’s a recipe you can enjoy all year with nutritious benefits.

Sweet potatoes are rich in beta-carotene, which promotes glowing skin, healthy eyes, and strong immune systems.

If you’ve never tried ghee before, it’s a dairy-free version of butter that has been a staple of Indian cuisine and Ayurvedic medicine for centuries. Ghee is full of butyrate, a fatty acid that helps protect the lining of the digestive system and reduces inflammation.

When purchasing ghee, look for grass-fed versions (like this one), so you get the most nutrient-rich varieties.

Savory Sweet Potato Casserole

Ingredients

Casserole Ingredients

3 cups sweet potatoes

2 tbsp ghee, melted (I use this brand)

2 eggs

1 tsp vanilla

½ tsp cinnamon

1 ripe banana, mashed

Pecan Topping Ingredients

1½ cup pecans

¼ cup real maple syrup 

¼ cup ghee, melted

½ tsp vanilla extract

1½ tsp cinnamon

½ tsp sea salt


Instructions

  1. Preheat the oven to 400 degrees. Line a cookie sheet with foil.
  2. Cut the sweet potatoes into roughly 1-inch pieces. Spread in a single layer on the foil.
  3. Bake in the oven for 25 minutes or until tender to a fork.
  4. Add the baked sweet potato to a food processor with the remaining casserole ingredients.
  5. Pulse the casserole mixture until combined. Set aside.
  6. In a small bowl, combine all pecan topping ingredients until well coated.
  7. Spray a 9 x 9-inch pan with coconut oil. 
  8. Spread casserole mixture evenly into pan. Top with pecan mixture.
  9. Bake for 30 minutes. Serve hot.
