Pure maple syrup is a lower glycemic, more mineral-rich alternative to regular white sugar. While coconut flakes, almonds, and coconut oil are full of healthy fats with anti-inflammatory properties.

A little touch of unsweetened cocoa powder gives these bites a nutrient-rich, brain-boosting bite of magnesium, antioxidants, and flavanols.

You won’t believe how delicious, satisfying — and nutritious — these healthier Almond Joy bars are. We won’t be surprised if you make them a sweet staple well beyond Halloween!

What I love about this recipe is that there are minimal ingredients required and can be whipped together in a matter of minutes.

Healthy Halloween Dessert: Almond Joy Bars

Ingredients

Coconut Layer

1 ½ cup unsweetened shredded coconut

1 tbsp maple syrup

⅓ cup coconut oil, melted

Chocolate Layer

¼ cup coconut oil

¼ cup unsweetened cocoa powder

3 tbsp maple syrup

1 tsp vanilla extract

Almond Layer

Handful whole almonds, salted or unsalted


Instructions

  1. Line a cookie sheet with parchment paper.
  2. In a bowl, stir together all ingredients for the coconut layer.
  3. In a sauce pot over medium-low heat, stir together all ingredients for the chocolate layer until melted.
  4. On the parchment paper, first layer the coconut mixture, pressing flat.
  5. Drizzle the chocolate mixture over the coconut layer. Top with almonds, then slice into bars.
  6. Place bars in the freezer to harden. Enjoy!
